Ingredients

  • 500g basa fillets
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp Cajun seasoning
  • 1 cup cream
  • ½ cup chicken or vegetable stock
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt & black pepper to taste
  • Fresh parsley for garnish

For Spiced Chips:

  • 3 large potatoes, cut into wedges
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Salt to taste

For Tomato Salad:

  • 2 cups cherry tomatoes, halved
  • 1 small onion, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt & pepper to taste

Method

  1. Marinate basa fillets with Cajun seasoning, salt, and pepper.
  2. Heat oil and butter in a pan, cook the fillets for 3–4 minutes per side until golden and set aside.
  3. In the same pan, sauté garlic, add cream and stock, and stir in paprika and more Cajun spice. Simmer until thickened. Return fish fillets to coat in the sauce.
  4. For spiced chips, toss potato wedges in oil, chili, garlic powder, and salt. Bake at 200°C for 25 minutes or until crisp.
  5. For tomato salad, combine tomatoes, onion, olive oil, lemon juice, salt, and pepper.
  6. Plate the basa fillets with creamy Cajun sauce, add spiced chips on the side, and finish with fresh tomato salad.
