Ingredients
- 500g basa fillets
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tbsp Cajun seasoning
- 1 cup cream
- ½ cup chicken or vegetable stock
- 2 cloves garlic, minced
- 1 tsp paprika
- Salt & black pepper to taste
- Fresh parsley for garnish
For Spiced Chips:
- 3 large potatoes, cut into wedges
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp garlic powder
- Salt to taste
For Tomato Salad:
- 2 cups cherry tomatoes, halved
- 1 small onion, thinly sliced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt & pepper to taste
Method
- Marinate basa fillets with Cajun seasoning, salt, and pepper.
- Heat oil and butter in a pan, cook the fillets for 3–4 minutes per side until golden and set aside.
- In the same pan, sauté garlic, add cream and stock, and stir in paprika and more Cajun spice. Simmer until thickened. Return fish fillets to coat in the sauce.
- For spiced chips, toss potato wedges in oil, chili, garlic powder, and salt. Bake at 200°C for 25 minutes or until crisp.
- For tomato salad, combine tomatoes, onion, olive oil, lemon juice, salt, and pepper.
- Plate the basa fillets with creamy Cajun sauce, add spiced chips on the side, and finish with fresh tomato salad.
