  • 500g basa fillets
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup arborio rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable or chicken stock, warmed
  • 2 tbsp harissa paste
  • ½ cup grated Parmesan cheese
  • 2 tbsp butter
  • Fresh parsley, chopped (for garnish)

Method

  1. Preheat the oven to 200°C (400°F).
  2. Rub basa fillets with olive oil, paprika, cumin, chili powder, salt, and pepper. Place on a baking tray and bake for 12–15 minutes until cooked through.
  3. For the risotto, sauté onions and garlic in a pan with a little olive oil until soft.
  4. Add arborio rice and toast for 1–2 minutes. Gradually add warm stock, one ladle at a time, stirring continuously until rice is creamy and al dente.
  5. Stir in harissa paste, Parmesan, and butter. Adjust seasoning.
